The Sockeye Salmon Fillets are a favorite, with a ton of inherent flavors. The high levels of beneficial Omega-3 fatty acids gives the sockeye it's rich, gourmet flavor. An excellent way of preparing Sockeye is to season the fish, sear both sides in a skillet, and finish the fillet to medium rare in a hot oven. The flesh is a vibrant red and delivers some plate appeal.
If you prefer white fish, try the Mahi Mahi or Cod fillets instead. Mahi Mahi is boneless and low in fat, and is a great choice for the barbecue. Cod has a more mild mannered flavor that can blend in with most flavors.
